Eat Low-Fat Food

Hi! I'm a mom of 2 and I love tasty (and fatty) food (Really, who doesn't?)! I own my love for the lards of life, but I budget my fats daily or else I easily overspend. By living a low-fat lifestyle, I hope to develop super powers (or something comparable would suite me just fine). At the very least, I hope my cholesterol levels will be thanking me as I gracefully progress through the ages and stages of life. Whole Wheat Banana Nut Muffins


I had some overripe bananas, no white flour, but the desire for banana bread. I found a recipe online for whole wheat banana muffins which was perfect since I had wheat I could grind. They are even better because they're made with whole foods and sweetened with honey. There's only 4 Tbsp of butter in the entire recipe which made 24 muffins exactly. They taste delicious. The recipe is a keeper!


Whole Wheat Banana Bread and Muffins
1 3/4 cups whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon sea salt
1 cup mashed over-ripe bananas (about 2-3 bananas) -I used 3
1/3 cup honey
1/4 cup melted butter
2 eggs
Blend in the blender and pour into lined muffin tins until each cup is barely 1/2 full.  Bake at 400 for 20 minutes. Makes 24.
For Bread:  Spread batter into a well buttered bread pan. Bake in a 350° oven for 50-60 minutes or until a toothpick inserted into the middle comes out clean.
